Copa's flights between June and November to Central American cities are down to less than $450 roundtrip after tax

It looks like Copa just dropped the price of flights throughout their schedule between June and November to Panama (PTY), Costa Rica (SJO), Guatemala (GUA) and Honduras (SAP).
June to November is the off-season for Central America, because it can get really rainy down there. The latest dates with anything available seems to be leaving on November 9th, which might give you the best chance of good weather.
You can also do a multi-city search, and fly into Panama and out of San Jose (Costa Rica) for example.
Try this on Orbitz:

3. Toronto to Panama City (PTY) on November 9. San Jose, Costa Rica (SJO) to Toronto on November 15th.
It comes to $411 roundtrip after tax. Here's the screenshot:
This flight is direct there, and a short stopover back in Panama on the way back. You need to watch when you're searching though, not all of Copa's flights have decent flight times.
